Why has LEGO strayed away from large ($200+) Minecraft sets? 

Minecraft is not an adult/older kid theme and most expensive sets are purchased for the older demographic.  If I remember correctly, Mountain Cave & Village were not big movers.  Since they were not big movers the sets were not produced in great quantities and did not have a long run.  So you have a very popular theme with a limited supply of these sets in the after market making for high prices which would seem to imply their popularity at the time.

I am saving my son's built Mountain Cave as it will easily pay for his college education in a few years :)

Ha, we'll save ours too, but we'll be lucky if it will pay for just one of their books.  College is ridiculously expensive.

and a new release of charged creeper in The Modern Treehouse (msrp is $119).

never ending, the minecraft releases are. Shift some of that team to architecture, Lego must.
