Amazon's inventory as displayed on the product page is near-real-time, except for the final in-stock-to-out-of-stock change (i.e. the "add to cart/buy now" button disappears and only third-party options are left). So the page will continue showing "only 1 left in stock", etc. for a minute or two even after the product is actually OOS.

Now if there were 3 units left and someone bought all 3 in the "final" transaction, the page will continue showing "only 3 left in stock" for a minute or two even though there's zero left.

He was referring more to the fact that every time it comes in stock it only shows 3 available.
