She also comes with her helmet in the cheap Ezra's Speeder set and the Sabine minifigure from Vader's Tie vs A-Wing is a much better version of her.

Nope. The helmet is exclusive to the Imperial Assault Carrier.

Interesting, Brickset told me that the Sabine in the IAC was the same one as in the Ezra's Speeder set, does that mean that accessories like helmets don't count as part of a minifigure in their database? 

 

I feel guilty about posting non deals in daily deals, so for anyone in Ireland the Pocket Money shop in Swords have 30% off all Lego, including some retired stuff. Phew, don't feel as bad posting random non deal stuff now

That's right. Minifigures are only head, body (with arms and hands) and legs. All accessories are counted as parts. Even the little antenna/scope is a separate part! It's not included with the helmet.
