I've been trying to decide between Jabba's Palace, Hoth Echo Base, and Helm's Deep for sets to invest in.  I'm a small time "investor,"  mostly a collector hoping to fund all or a good chunk of my collection through a little investing.  I ended up purchasing 2 of each of these sets, one to build and one to sell later on.  I was going to put all my chips into Helm's Deep or Jabba's Palace, but I figure a little diversity never hurt anyone.  All of these sets are on sale or clearance in my area, so I should at least make a little money when these go EOL.
