Here's a quick list of official airplanes that LEGO has done.

I just honestly would like to see more classic airplanes. There certainly is a lot to choose from the first World War alone. I do like some of the airplane designs that have been done for the CREATOR theme, but those don't even come close to an "Ultimate Collector Series" style set based on a real world design.

They should come out with some WW2 themed aircraft. That would be sweet.
